All-Purpose Sausage, Pepper and Potato Tray Bake
By Flour & Herbs. Total time includes resting or chilling where specified; cooking times can vary.
Directions
- Start the potatoes. Heat the oven to 425°F (220°C), conventional. Cut the potatoes into even ¾-inch cubes. Toss on a large rimmed tray with the olive oil and 1 teaspoon All-Purpose Seasoning. Spread into a single layer and roast for 15 minutes.
- Add sausage and vegetables. Cut the fully cooked smoked sausage into thick rounds and chop the peppers and onion into similar bite-sized pieces. Add to the potatoes with the remaining teaspoon of seasoning. Toss carefully and spread out again; use a second tray if the mixture is crowded.
- Finish roasting. Roast for 20–25 minutes more, turning once, until the potatoes are tender when pierced and the vegetables have browned edges. Heat the fully cooked sausage according to its package instructions. This method is written for fully cooked sausage, not raw sausage.
- Serve from the tray. Scatter with chopped parsley and taste before adding salt because the sausage and seasoning already contain it. Divide the potatoes, peppers, onion and sausage evenly among plates.
Estimated nutrition: 420 calories per serving (1/4 of the recipe). Includes listed toppings and sauces; excludes suggested accompaniments. Actual values vary with brands and portions.
Before you start
Use a large rimmed tray and fully cooked smoked sausage as specified. Cut potatoes into ¾-inch cubes; larger pieces may remain firm when the peppers are ready.
Cooking tips
Give potatoes their head start and spread ingredients out again after adding sausage. Follow the sausage package's heating instructions.
Serving ideas and variations
Serve with mustard or a green salad. Different fully cooked sausages change the saltiness and nutrition, so taste before adding extra seasoning.
Storage and reheating
Refrigerate in shallow covered containers within 2 hours and use within 3 days. Reheat in the oven, turning once so the potatoes and sausage heat evenly. Keep the refrigerator at 40°F (4°C) or below, and reheat cooked leftovers to 165°F (74°C).
