Tender steak cubes and browned mushrooms need little more than a good seasoning and a hot grill. A spoonful of garlic-parsley butter adds a rich finish. Thread the beef and mushrooms separately so each can come off the grill when it is ready.

Steak and Mushroom Skewers with Garlic-Parsley Butter
5 minutes resting; soak wooden skewers separately if using. By Flour & Herbs.
Directions
- Prepare the skewers and grill. Use metal skewers, or soak wooden skewers in water for at least 30 minutes before using. Preheat the grill to medium-high, about 400°F (200°C), and clean the grates.
- Season separately. Toss the steak with 2 teaspoons Steak Seasoning and 2 teaspoons oil. In a separate bowl, toss the mushrooms with the remaining teaspoon of seasoning and teaspoon of oil. Thread onto separate skewers, leaving a small gap between pieces.
- Make the butter. Melt the butter in a small saucepan over low heat. Add the garlic and cook gently for about 1 minute without browning. Remove from the heat and stir in parsley and lemon juice.
- Grill the skewers. Grill the steak skewers for about 8–12 minutes, turning every few minutes, until a thermometer inserted into the center of the largest pieces reads at least 145°F (63°C). Grill the mushroom skewers for about 10–15 minutes, turning until browned and tender. Remove each type as it becomes ready; thickness and grill heat affect timing.
- Rest and finish. Rest the steak for 5 minutes before serving. Spoon the warm garlic-parsley butter over the steak and mushrooms. Serve with salad, potatoes, or rice; those sides are not included in the calorie estimate.
Estimated nutrition: 350 calories per serving (one quarter of the recipe). Includes listed sauces and toppings; excludes optional accompaniments. Actual values vary with brands, trimming, portions, and marinade left behind.
Before you start
Use a grill, thermometer and metal skewers, or allow an extra 30 minutes to soak wooden skewers. Cut sirloin into even 1½-inch cubes.
Cooking tips
Thread mushrooms and beef separately so each can leave the grill when ready. Keep small gaps between pieces and brush with finishing butter after cooking.
Serving ideas and variations
Serve with potato wedges, rice or a green salad. Use similarly sized cremini mushrooms; halve very large ones so they cook evenly.
Storage and reheating
Remove leftovers from skewers and refrigerate in shallow covered containers within 2 hours. Use within 3 days and reheat gently with a little moisture; steak firms as it reheats. Keep the refrigerator at 40°F (4°C) or below, and reheat cooked leftovers to 165°F (74°C).
