Crisp Oven Potato Wedges with French Fry Seasoning
By Flour & Herbs. Total time includes resting or chilling where specified; cooking times can vary.
Directions
- Cut and dry the wedges. Heat the oven to 425°F (220°C), conventional. Cut the potatoes into evenly sized wedges, rinse and dry very thoroughly with a clean towel. Surface moisture makes it harder for the edges to crisp.
- Oil and arrange. Toss the wedges with the olive oil until lightly coated. Arrange cut-side down on a large metal tray with gaps between pieces. Use two trays if necessary; do not heap them together. Save the French Fry Seasoning for after roasting.
- Roast and turn. Roast for 35–40 minutes, turning after 20 minutes so another cut side touches the tray. Look for browned, crisp edges and centers that a fork pierces easily. If wedges stick when you try to turn them, let them brown a little longer before loosening with a thin spatula.
- Season while hot. Transfer the hot wedges to a bowl and toss immediately with French Fry Seasoning and parsley. Taste before adding more seasoning. Serve straight away while the contrast between crisp edges and fluffy centers is strongest.

Before you start
Use a large metal tray and thin spatula. Cut similar wedges and dry them thoroughly; moisture and crowding are the main obstacles to crisp edges.
Cooking tips
Season after roasting to keep the blend from scorching. Turn onto a second cut side midway and wait for a browned crust to release before forcing stuck pieces.
Serving ideas and variations
Serve with burgers, chicken or a yogurt dip. Add the dip on the side so the wedges stay crisp.
Storage and reheating
Refrigerate leftovers within 2 hours and use within 3 days. Reheat in a single layer in the oven or air fryer until hot throughout; they will be softer if microwaved. Keep the refrigerator at 40°F (4°C) or below, and reheat cooked leftovers to 165°F (74°C).
